Green Curry Risotto


Green Curry Risotto Visit: www. ladyyumyum. com Ingredients 1 large white onion 1 tbsp olive oil 1 cup arborio rice 1/4 cup vinegar (try citrus flavored vinegars) 2 cups of “no chicken broth” (a vegetarian chicken broth substitute) 1 cup lite coconut milk 1 tbsp green curry paste Directions: Dice and saute onions in 1 tbsp olive oil Rinse Arborio rice until water runs clear When the onions reach a milky clear state, add arborio rice to pan Stir until the tips of the rice become clear Add vinegar to rice and stir until absorbed into rice Put mixture into a crock pot In a mixing bowl, mix “no chicken broth”, lite coconut milk, and green curry paste Pour mixture over rice in crock pot and stir Cook on low for about 6 hours

Vegan Indian Curry – Tutorial – STEP 1


At home Video tutorial – How to cook my quick & easy, Vegan Indian Curry, using a mock meat alternative. Preperation & Cooking Time: 30 minutes Serving: 4 people This is a great, simple curry recipe, when you do not have the time or ingredients available to make your own curry paste. Great for people who are new to Vegan cooking. Video’s are done in 3 seperate stages ( step 1, step 2 & step 3) See video’s Step 2 & Step 3 for the remaining tutorial. Filmed on my mobile phone, so it is not the best video around, but shows the basic’s of how to make a delicious vegan curry. You can use fresh vegetables instead of frozen. I’m using frozen vegetables in this video, because I did not have any fresh vegetables available tonight. ~Vegan Indian Curry Ingredients used in video~ White Rice. ( 2 cups) cooked Half of a large brown onion ( diced) Peanut Oil ( for cooking) 2 tablespoons Mixed Vegetables ( aprox. 3 – 4 cups) frozen or fresh. Patak’s Madras Curry Paste ( 3 tablespoons) Coconut Milk ( 165ml/5. 6fl oz) Peanut Butter ( 2-3 Tablespoons) Water ( aprox. 2 cups) enough to simmer sauce 1 packet of Lamyong Vegan Rendang Meat ( vegan meat alternative) NOTE: If you live in Australia, the Lamyong Vegan Rendang Meat alternative is available from Vegan Online (online vegan store)

Veg kolhapuri – Indian Vegetarian Curry


Introduction : It is a dish packed a lot of vegetables, another side dish for rotis phulkas parathas. Ingredients : Carrot – 1 big Cauliflower – 1/2 medium Potatoes – 2 small Dry Red Chillies – 8 Dry Shredded Coconut -1/2 cup Coriander Seeds – 2tsp Cumin Seeds – 1 tsp Garam Masala – 1/2 tsp Salt – to taste Oil – 2 Tbsp Onion – 1 1/2 cups Tomato – 2 no Ginger Garlic Paste – 2 tsp Procedure : Step 1 : Boil all the vegetables in a sauce pan adding 1 cup of water until done. Step 2 : For masala Dry roast Chillies, coriander seeds, cumin seeds, and coconut until nice aroma starts coming and set it aside to cool and make a paste adding sufficient water. Step 3 : In the same pan add oil, when it is hot addcumin seeeds, onions and cover to cook till onions are tranparent. Step 4 : Take this onion mixture into a blender and add tomatoes to make a paste. Step 5 : Add this to the pan and cover to cook until oil starts oozing out from the mixture. Step 6 : Add the masala paste and cook for 2 min and add the boiled vegetable and a cup of water, salt, cover and cook until the mixture comes to a boil. Step 7 : Serve hot with Chapathis, rotis, phulkas, poori.
