This easy mock chick’n salad is low-fat and flavorful. It makes a fantastic sandwich or is equally delicious stuffed into lettuce or radicchio leaves.

Variety-soap spoof cooking show where the host next time makes healthy burritos using ‘substitution instead of elimination’ as the character “Christina Maria Conchita Gonzales Tacos Grandes” cooks for her Vato friends. . . . . it is hilarious and at the same time a healthy and delicious meal is prepared in every episode. We shot this for under $500 at a friend’s house with the help of a bunch of friends. . . . thank you friends!!!!!

Here’s a super fun and easy project you can do with your kids, your neighbor kids or any kid you happen to have lying around the house. The mango is delicious, juicy and just like a box of Cracker Jacks, it gives you the most amazing prize! (Ok I admit cracker jacks prizes suck, but the mango seed is FUN and doesn’t rot your teeth!) If this isn’t enough to lure you over to my channel, I have also included something really really dumb that I’m going to attempt this fall. Grab a snack and drop by, ok? We haven’t hung out in awhile and I miss having you point at me and laugh. . . I mean I miss having you hang out and tell me how cool I am.
Note: Mango photo along with other great photos by my friend Joel Ignacio can be seen at: www. flickr. com

OPEN ME!!! For you guys trying this recipe out for the first time I would suggest simply using regular cream cheese. It is still around 100 calories per serving and lower in fat content and to be honest it is a lot better. Full Recipe about 18 servings (I used the half recipe in the video) -16 oz cream cheese (if you want to make it even lower in calories and fat use low fat cream cheese like I did although taste does suffer a bit) -2 of the 8 oz package reduced fat croissant dough -Packet of Hidden Valley Ranch Seasoning mix (You wont use the whole packet sprinkle in and taste as you add more) -Any Veggies you would like on top! (vegetable medleys are cheaper) Preheat oven to 375 degrees. Lay out dough on non-stick cooking sheet/pan. and put in oven for around 11 minutes (keep an eye on it every couple minutes it bakes fast!). Take out and let cool completely. Put cream cheese in a bowl and slowly add in the ranch a little bit at a time. You most likely wont even use the whole packet for the large portion. Spread the cream cheese mixture evenly over the croissant. Dice up the veggies you chose to put on the pizza (smaller pieces allow for easier cutting later and they wont fall off as easy either). Spread the veggies evenly over the pizza. Optional: Throw some shredded reduced fat cheese of your choice over top. Dice up (pizza cutter is easiest) and enjoy! KEEP REFRIGERATED AND COVERED! Lasts 3-5 days in the fridge.
