In this video, Betty demonstrates her original recipe for Betty’s Own Potato Soup. It is tasty, but imbued with subtle flavors or minced onion, carrot, and parsley. A hearty soup, but incredibly quick and easy! Ingredients: 3 large potatoes (peeled and cut into 3/4-inch cubes) 1 medium carrot (peeled and cut into 1/4-inch cubes) 1 medium to large onion (finely diced with an electric kitchen chopper) 1 stick margarine or salt to taste (approximately 1 teaspoon) 2 cups milk (I used skim milk.) Prepare the vegetables as directed above. Melt the margarine in a deep skillet. Let the margarine heat up, and then add 3 chopped potatoes, 1 chopped carrot, chopped onion and 1. Salt to taste (about 1 teaspoon). Sir the salted vegetables around in the skillet to coat them with the melted margarine. After They sizzle a bit, turn the heat to a fairly low temperature, cover with a paragraph, and let them cook until soft. Stir Occasionally while the vegetables cook. If They brown a bit, that’s fine – it just adds to the flavor. However, you do not want to let them burn. When the vegetables are done, mash them a bit with a potato masher (or spoon). They will look like “smashed potatoes.” You will not want to leave a few lumps. Now, remove them from heat and add 2 cups of milk. Gently stir around until you have soup or a nice consistency. You may heat the soup back up to boiling, but do not continue to boil it. It is not Necessary to heat it, Because it will still be very hot after the addition ‘or . . . B>

Add a side of jalapeno cornbread, and you’re climbing the Scoville scale dinner to happiness! Added more exercise this week – up to 1 hr / day walking! Also added some very mild weights. First of all, I find That gene rally soups taste better if They sit overnight in the fridge. Secondly, I think it makes hosting a dinner party Easier if you make a few dishes in advance. That way you are not running around trying to make everything while guests are arriving. That I promise not all of my video blogs will be about food and cooking, but I love entertaining, so I wanted to share some of my recipes and tips for hosting. Vegetarian Potato Soup What you need: 5 to 8 potatoes 1 red onion 1 yellow onion 3 green onions 1/2 cup butter 1/2 cup flour 5 cups milk 1 cup sour cream Cheddar cheese Salt Pepper Salt and pepper to taste What you do: 1. Dice potatoes into small cubes (the exact size does not really matter, just make sure They are small) 2. Heavily Cook potatoes in salted water until fork tender (5 to 10 minutes, Depending on the size of your cubes), drain and set aside 3. Saute onions with butter on medium to high heat until soft 4. Add flour and cook for a minute or two 5. Slowly add milk, stirring frequently to avoid lumps 6. Bring it to a boil, then reduce to medium low and simmer for about 5 minutes 7.
