Here in the Rocky Mountains, because of our short growing season there lots of green tomatoes in the fall. We ended up in a restaurant the other day and one of the waitresses in that restaurant came up to us and said ” Would you guys like some fried green tomatoes? ” and we said ” Well yeah! What do you do with them? “And she said “You know, just the usual, where your mom used to fry them” and she told us the traditional fried green tomato recipe, but when went back home, I thought about making something really yummy with these. So first of all, you might have noticed that I am chopping garlic and I didn’t peel the garlic. The reason is because these little papers on the outside of the garlic cloves are where the most vitamin C is. I just cut the little ends off, chop the cloves off with the paper in them which makes it easier and put them in the skillet with a little bit of olive oil. We are going to turn the heat on to about a medium and let those brown a bit, and let’s slice these green tomatoes and add them to the pan.
